Pot marigold

Pot marigold

Some marigolds are poisonous. Some are good food. The one on the median might be either, so until we get that straightened out don't eat any gold flowers.

The edible Pot Marigold has so much going on. Its brilliant orange petals make a great dye, or a soothing cup of tea. It adds a tangy, peppery spice to salads, soups, or stews, so it’s sometimes known as the “poor man’s saffron.” Doctors once used to to staunch bleeding. People even use it in cheese. Out in the actual garden, it is prone to pests, but it also attracts the good guys: lacewings, ladybugs, and hoverflies. So it’s great in vegetable gardens. Who knew that the marigold had so much to offer?
